Halal Cart Chicken and Rice with White Sauce

If you know, you know. There is something about halal cart food that hits different. The smell alone (smoky, spiced chicken sizzling on a flat top grill with turmeric yellow rice underneath) is enough to stop you mid-sidewalk. Growing up in the US, halal carts were one of the first places I could just walk up and eat without a second thought. No ingredient label decoding, no asking the server awkward questions. Just hand over your cash, grab your plate, and go.

Ingredients
  

For the chicken:
  • 2.5 lbs halal chicken thighs boneless, skin-on for best char
  • 4 cloves garlic crushed
  • 1 tbsp ginger paste
  • 1/4 cup plain Greek yogurt
  • 2 tbsp tomato paste
  • Juice of one small lemon
  • 2 tbsp 7 spice or baharat
  • 1 tbsp smoked paprika
  • 1 1/2 tsp cumin
  • 1 tsp turmeric
  • 1 tsp cinnamon
  • 1 tbsp salt
  • 1 tsp black pepper
  • Drizzle of olive oil
For the yellow rice:
  • 2 cups basmati rice
  • 3 cups chicken broth halal-certified
  • 1 tbsp butter
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp allspice
  • Salt to taste
For the white sauce:
  • 1 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tbsp white vinegar
  • 1 tsp sugar
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 2 tbsp water to thin it out

Method
 

  1. Marinate the chicken: Start the night before if you can. Mix all the marinade ingredients together in a large bowl, add the chicken thighs, and coat everything really well. Cover and refrigerate overnight. If you're doing same-day, marinate for a minimum of 2 hours. The yogurt is what makes the chicken tender, so don't skip it.
  2. Cook the chicken: Take the chicken out and let it sit at room temperature for about 20 minutes before cooking — this helps it cook evenly. Heat a cast iron skillet or grill pan on high until it's smoking hot. Add a little oil and cook the chicken thighs 6 to 7 minutes per side until you get real char on the outside. Don't touch them while they're cooking — let that crust form. Once done, let them rest for 5 minutes, then slice thin against the grain.
  3. Cook the rice: Melt the butter in a pot over medium heat. Toast the dry rice in the butter for about 2 minutes until it smells nutty. Add the broth, turmeric, cumin, allspice, and salt. Bring to a boil, then reduce to low, cover, and cook for 18 minutes without lifting the lid. Remove from heat and let it steam for another 5 minutes, then fluff with a fork.
  4. Make the white sauce: Whisk everything together until smooth. Taste it — add more vinegar if you want more tang, more sugar if you want it sweeter. Make it yours.
  5. Serve: Pile rice on a plate, lay the sliced chicken on top, and drizzle generously with white sauce and a zigzag of hot sauce. Add a few falafel on the side if you want the full cart experience.

Notes

High heat is non-negotiable. The char is what makes this taste like a cart. If your pan isn't screaming hot before the chicken goes in, you'll steam it instead of searing it, and it won't be the same.
Make the white sauce a day ahead if possible. It genuinely gets better overnight as the flavors come together.
Don't lift the rice lid while it cooks. Every peek lets steam escape and can throw off the texture.
