This week’s Ramadan highlight recipe is Halal Cart Chicken Over Rice — so flavorful, comforting, and surprisingly easy to make. Definitely a great addition to your Ramadan cooking rotation!

🍗 Chicken Marinade

First, clean your chicken and prepare it to marinate with the following:

Ingredients:

Give this a good mix and make sure the chicken is fully coated. Cover and marinate for at least 2 hours (longer = deeper flavor).


🍚 Seasoned Rice

Ingredients:

(My family eats brown rice now for health reasons, so that’s what I’ll be using when I make this 🤎)

Toast the spices in butter and olive oil. Fry the tomato paste slightly, then add the rice and stock. Bring to a light boil, then reduce to the lowest setting, cover, and cook for about 25 minutes until water is gone.

Fluff the rice so it doesn’t stick together, then set aside.


🤍 The Famous White Sauce

Ingredients:

Blend until smooth (immersion blender works great, or whisk by hand). Add to a squeeze bottle for that classic halal cart finish.


🍳 Cooking the Chicken

By now, your chicken should be nicely marinated. In a pan, add olive oil and a little butter, then cook the chicken until it’s about 90% done. Remove it from the pan, chop it into pieces, and put it back into the pan to finish cooking through.
